I've been trying some new recipes lately and have gone back to some old favorites. I'm back on a Pioneer Woman kick. If you haven't tried her yet, you should. After living in Austin, I'm a bit of a Mexican food snob. I LOVE tortilla soup and have tried many recipes. This one, is one of my favorites so far. It was easy, the ingredients were simple and it made enough for Jason and I to eat 2 nights of leftovers (I froze half of it for another night and it froze well, FYI).
Pioneer Woman's Hot Roast Beef Sandwiches (or ham if you prefer) - Easy, make a dozen, and then wrap them in foil and stick them in the freezer for when you want a hot sandwich. Reheat in the oven at 350 for 25 min. I think I'll go lighter on the horseradish mayo next time though, Jason wasn't a fan of that flavor.
I am on a search for the perfect pizza crust recipe. This will be at least my 4th. Its still not the airy Italian style that I would like it to be, but this is one of the better crust recipes I've tried so far. It was easy and cooked up nicely. I used different toppings than her, so just skip down to the crust recipe.
This is PW's version of a soup they have at Olive Garden. Its her Sausage, Potato, & Kale soup. My Aunt Kathy shared it with me for the first time and its a great recipe. There are few soups that my husband will eat without complaint at dinner time and this is one of them. I skip the half/half and do a combo of 1% and whole milk to make it slightly more healthy.
